Disney Parks Best Bites: March 2017

This is Lost Boy Tricky Rick. Before I get to the rundown of the dishes from the Disney Parks Blog article, Disney Parks Best Bites: March 2017, I will give you my culinary credentials. I have been cooking since I was a kid. I have been a very good family and self taught chef for decades. Last year I started a blog about my adventures in cooking again after years of food in a can, bag and box. I am very familiar with many cuisines from around the world. Here we go.

The new sandwiches at World Showcase of Flavors food truck in Disney Springs are Chicken Cemita Sandwich, Chilean Steak Sandwich, Meatball Pomodoro Sandwich and Pork Belly Ham and Cheese Sandwich. Cemita is a Mexican sandwich where the bread has sesame seeds on it. It is a kind of torta. Torta is a typical Mexican sandwich that includes a meat, cheese, beans lettuce and/or cabbage and a slice of tomato. Sliced avocados or guacamole are another common torta condiment. Traditional toppings for a Cemita are sliced avocado, meat, white cheese, onions, salsa roja (red salsa), and the herb papalo. The Chilean steak sandwich is thinly sliced steak with tomatoes, green beans, and chili peppers. The Meatball Pomodoro is a Meatball sandwich topped off by a simple tomato sauce (tomatoes, garlic olive oil, and sugar) with mozzarella and fresh basil. The pork belly ham and cheese is a ham and cheese sandwich featuring pork belly, which is the cut of meat that bacon comes from.

Now we get to the two hot dog offerings at Disney Springs’ B.B. Wolf’s Sausage Co.: The Big Bad Dog (a spicy hot dog with a chili-garlic sauce, onion jam, and a cucumber-tomato relish) and the Greek Dog (an all-beef hot dog topped with fresh Tzatziki sauce, shaved gyro meat, cucumber-tomato relish before being finished with spring mix and Feta cheese) When they say spicy believe them. The chili-garlic sauce appears to be a Vietnamese style sauce, it is not for the faint of heart or tender tongues. Tzatziki sauce (pronounced Tat-Zee-Kee) is yogurt, cucumbers, garlic, dill, and olive oil. Gyro (pronounced Yee-Row) meat can be lamb, pork or beef. It is cooked on a vertical skewer then shaved. Feta is a Greek style cheese. In the states it is made with cow’s milk, traditionally it is made for either sheep’s or goat’s milk. It has a tangy salty flavor.

The new offerings in the Animal Kingdom are at Eight Spoon Café, three varieties of baked macaroni and cheese including one topped with pulled pork and one topped with shrimp and sweet chili sauce. Sweet chili sauce is a sugary sauce with chili flakes. It can be on the spicy side. At Smiling Crocodile they are offering three new open faced sandwiches: turkey, salmon or Pimento cheese with thick-cut smoked bacon, lettuce and tomato on ciabatta bread. Pimento cheese is a Southern delicacy made with Processed cheese (American or Velveeta and the like), mayonnaise or salad dressing, and pimentos, blended to either a smooth or chunky paste. Additional ingredients can include: cream cheese, salt and pepper, Louisiana-style hot sauce, Worcestershire sauce, cayenne pepper, paprika, jalapeños, onions, garlic, and dill pickles.

One of the desserts includes blueberry compote. Compote is fruit served whole or in pieces in sugar syrup. The syrup can be seasoned with vanilla, lemon or orange peel, cinnamon sticks or powder, cloves, other spices, ground almonds, grated coconut, candied fruit, or raisins.

At Bengal Barbecue there is a new skewer, the new skewer, has grilled pork belly served on a Iceberg lettuce, topped with Hoisin sauce, picked carrots, daikon, and cilantro. Hoisin is a
Chinese sauce made of soy beans, red chilis and garlic. Vinegar, Chinese five spice and sugar are also commonly added. Depending on the chef it can be spicy. Daikon are Asian radishes.
